Vineyard
We grow the “Favorita” grapes used for this wine in a vineyard that is located in the origin area of Langhe denomination. Specifically, we grow such grapes in a vineyard, on a surface of 1.23 ha.

Soil
Medium consistency; limestone and sand are predominant.

Exposure
South-west.

Altitude
From 220 to 310 m asl.

Training system
Guyot, with its form modified as a small arch.

Cultivation
During the vegetative cycle, we carry out all the works in the vineyards with great professionalism and respect for the environment and the landscape. Therefore, we avoid weeding and follow the integrated control method against potential diseases. In order to obtain best quality grapes, during summer clusters undergo a thinning process, according to the specific ripening ability of each vine.

Harvest
In normal vintages, we harvest the grapes for this wine in the first half of September.

Vinification
In the cellar, the grapes are crushed and so we obtain a must that starts its fermentation (without skin contact) in stainless steel containers. Such containers have a capacity of 50-100 hectolitres and their temperature is controlled.

Ageing After the draining off process, this wine is left for a few months in stainless steel containers for ageing.

Bottling
A few months later, in Spring, we start bottling this wine.

Bottle ageing
Before being put on the market, this wine is left for 2-3 months in bottles that are laid down in the dark cellars.

Production
The average annual production for this wine is 14,000 bottles.

Organoleptic features  This wine has a uniform straw yellow colour, bright and intense. Its perfume is definitely fruity, with hints of “Renetta” apples and lemon together with a delicate scent of sage. The taste of this wine is harmonious, mildly tart, warm ad with a good persistence.

Good matches
It is a delicate and pleasant white wine and it perfectly matches with fish, molluscs and vegetable starters. It is also a good match for long pasta with delicate sauces.

Storage
The best place for storing this wine is in an underground cellar, with a constant temperature and without any light or noise.
